Yates Mill Corn Muffins

From Smitten Kitchen! I think next time I'd halve the corn kernels. Lucky me, I had some corn meal hand delivered to me from North Carolina. Usually I love these warm with marmalade, but I had apricot preserves on hand and they proved to be quite yummy.

Sea Lion Baby who escaped, and then squeezed under the gate to re-join his family! He put on the best show of the day and I think he knew it!
