This recipe from "Food Network Magazine" has been in my "to make" pile for a while. The recipe was really easy. The cookies were a dead ringer for the real thing. The cream is VERY rich and I think if I were to make this again I would use less of it. I also rolled some in red sugar for valentines day. Yum!

This would be a great recipe to could swap out mint extract for the vanilla in the filling and add some green food coloring to make Mint-O's.
